Cheese-Filled Ravioli
Accessories: Pasta roller, whisk, mixer attachment, frying pan.
For the ravioli dough, mix 200 g durum wheat semolina with 100 g flour and three eggs, then roll out using the pasta roller on setting 7. For the cheese filling, blend 150 g Pecorino, an equal amount of Parmesan, and 100 g cream cheese using the whisk attachment, then fill the ravioli. Boil the filled ravioli for about 5 minutes. Finally, toss them in a pan with lemon zest, sage, rosemary, and a little butter.
Strawberry Ice Cream
Accessories: Ice cream maker attachment, immersion blender.
Place the ice cream maker attachment in the freezer for approximately 18 hours to chill. To make the strawberry ice cream, heat 180 ml whole milk, 100 g sugar, and 80 ml cream in a saucepan, and stir in 30 g skimmed milk powder. Puree 210 g strawberries and add them to the mixture, then process everything in the ice cream maker attachment on the lowest setting for about 20 minutes.
Sausages
Equipment: Meat grinder, pot, frying pan or griddle.
For the filling, cut approximately 800 g of pork into small pieces and grind using the medium plate of the meat grinder. Season with salt and pepper, add 375 ml of white wine, mix well, and refrigerate for about 12 hours. Then, use a sausage stuffer to form the sausages. Divide the sausages into four pieces and coil each one onto a wooden skewer. Fry for approximately 8–10 minutes per side. Wash and boil 600 g of potatoes until tender, then toss with chopped herbs (thyme, chives, parsley, and basil), vinegar, oil, salt, and pepper.
