How does steam cooking work?

When steaming, water is heated on the floor or in an external container to the boiling point of 100° Celsius. This creates steam that envelops the food in the cooking chamber and cooks it gently. This means that a steamer has advantages that an oven or microwave does not have. The biggest advantage of a steamer is that the food is prepared gently and evenly. The steam preserves many nutrients that are lost when cooking in a pot at high heat.

Beyond standard steam cooking, a steam oven offers other preparation options, such as:

Because the food does not come into direct contact with a large amount of water, it retains its firm texture and juiciness. Steaming preserves the food's intense flavor.

3. Vibrant Colors

4. Dishes from the day before—tasting freshly cooked

If you want to reheat dishes from the day before, use the regeneration function. Food is gently reheated rather than dried out, so it tastes freshly cooked instead of simply warmed up.

5. Sous-vide cooking

A steam oven is ideal for sous-vide cooking—a particularly gentle preparation method in which food is first vacuum-sealed and then cooked in the vacuum using hot steam at low temperatures. The result is an unbeatable, intense flavor.

6. Low-fat preparation

You need little to no fat for steam cooking. It is therefore ideal for low-fat dishes and for anyone wishing to avoid adding oil or fat.

7. No Burning or Boiling Over

Food is not cooked directly in the pot, so it cannot boil over. Burning is also impossible in a steam cooker, as hot steam does not cause browning. Furthermore, low temperatures prevent overcooking.

Steamer Disadvantages

In addition to the advantages of steamers, there are of course also disadvantages. After all, there are always two sides to the coin.

No Roasting or Browning

Roasting or browning is not possible with a steam cooker. This means you cannot use a steam cooker to prepare foods where browning is key—such as grilled vegetables, steaks, or roast chicken. A steam cooker is also unsuitable for dishes that require a browned topping (like gratins) or recipes that call for high temperatures.

Same Cooking Times

Whether this is truly a disadvantage is debatable. The fact remains, however, that a steam cooker prepares food just as quickly as an oven or a pot, since cooking time depends on the size of the pieces. The cooking process itself therefore remains roughly the same, regardless of the appliance used. Nevertheless, a steam cooker can save you time because you can cook multiple dishes simultaneously.

Before you decide on a model, here are some practical tips for buying a steam oven.

  • Cooking cavity: The size of the cooking cavity is crucial for the amount of food you wish to prepare at one time.
  • Water tank or direct water connection: Since steam ovens require water, they need either a direct water connection or a refillable water tank. Check the connection options in your kitchen beforehand.
  • Programs: A modern steam oven features automatic programs, a reheating function, and sous-vide settings.
  • Cleaning: Look for a model that is easy to clean, but pay particular attention to descaling programs. This ensures you will enjoy your steam oven for a long time.

A steam cooker is a worthwhile investment for anyone committed to healthy eating. No other kitchen appliance makes healthy cooking easier or more effective than a steam cooker, as it cooks food gently. This means the food does not get overcooked—as can happen in a standard pot—and retains the majority of its nutrients.

No. A steam cooker gently cooks dishes at low temperatures using hot steam. No browning occurs during this process. Dishes requiring a crispy, crunchy crust (such as crispy chicken, casseroles, or pizza) do not turn out well.
